4. Asian Tuna Melt Nachos

A cheesy, quick, and simple recipe that you can make without cooking and works well as a snack or a light lunch. 

Ingredients you will need

  • Tortillas
  • Olive oil

  • Fish sauce

How do you prepare it?

Apply olive oil to two baking sheets, then coat one side of the tortilla with it. Stack them all up on top of each other and chop until you get 8 stacks of tortillas. Place the tortillas in a layer and season them with salt and chilli powder. Bake for 12 minutes. 

For the tuna salad, blend in a bowl the tuna, fish or soy sauce, sesame oil, green and red onion, red pepper, and cilantro. Season that with pepper and salt. Sprinkle cheese on the chips once they are done and bake for another 5 minutes until the cheese has melted. Remove from the oven and top it with the tuna salad. You can also add guacamole and salsa but this part is optional. 

5. Roast Beef Summer Rolls

These summer rolls are packed with deli roast beef and a variety of veggies for a light and refreshing snack. 

Ingredients you will need

  • Garlic
  • Brown sugar
  • Thai green curry paste
  • Fresh lime juice
  • Fish sauce
  • Mint 
  • Cilantro 
  • Mayonnaise
  • Coleslaw mix
  • Deli roast beef
  • Rice paper wrappers

How do you prepare it?

Smash the garlic, brown sugar and green curry paste, combine it with lime juice, 3 tablespoons of water as well as fish sauce. Add half of cilantro and mint. Stir the mayo with one tablespoon of the green curry sauce. After that, add the coleslaw mix, in a large bowl along with the deli roast beef, cilantro, and mint.
