How to Prepare Fresh Lobster Tail Meat

The first thing you need to know about preparing fresh lobster tail is that as soon as you bring the meat arrives at your door, you must refrigerate it overnight. The second thing you need to know is that you must thaw the lobster tail meat before cooking. Then you’re free to prepare a delicious meal! 

There are three different ways to prepare fresh lobster tail meat: you can butter poach, steam, or roast the meat. Here are three simple ways to enjoy each approach. Try all three to see which one you prefer. 

To Butter Poach Fresh Lobster Tail:

  1. In a saucepan, bring 2-3 tbs. of water to a simmer over medium heat.
  2. Whisk in 1 tbs. butter. When butter melts, add another piece of butter. Continue adding butter pieces until you’ve added 1 cup or two sticks total. (Make sure you don’t let the butter come to a boil; if you do, the butter will separate.)
  3. Add defrosted tails. Poach for 3-4 minutes.
  4. Turn tails in butter mixture and poach for another 3-4 minutes.

To Steam

  1. Bring 2 inches of water to boil in a deep skillet or large pot with a tight-fitting lid. Add a pinch of sea salt.
  2. Place a steamer basket over water and add defrosted tails.
  3. Cover and steam for 5-6 minutes until meat turns opaque.

To Oven Roast:

  1. Preheat oven to 425 degrees F.
  2. Place thawed lobster tails on a sheet pan or baking dish.
  3. Drizzle with oil, butter or your favorite marinade.    
  4. Place in oven and cook for about 10 minutes.
