Ingredients 

  • 1 pound boneless skinless chicken breasts
  • One tablespoon of whole peppercorns
  • Two cloves garlic
  • One tablespoon salt
  • 1/4 medium white onion
  • One bay leaf
  • 1/2 large white onion
  • Raw pork chorizo
  • Clove garlic
  • Boiled, seeded and peeled tomatoes
  • Chopped tomatillos
  • Two tablespoons pureed chipotle
  • 1 1/2 teaspoons kosher salt
  • Freshly ground black pepper
  • Mexican oregano
  • One sprig of fresh marjoram
  • One sprig of fresh thyme
  • Ten store-bought tostadas

Directions to cook 

Put the chicken, salt, garlic, bay leaf, onions and peppercorns in a heavy saucepan with a few cups of water. Heat it and cook it with medium flame for twenty minutes. Take the chicken from the liquid. Keep the broth aside for later. Start shredding the chicken with your hands or a fork. 

To make the tinga, take a large saucepan. Stir fry the chorizo for six minutes. Now add the onions and sauté them until it turns fragrant. Next, add garlic and then tomato, and tomatillos. After that, add chipotle, salt, pepper, Mexican oregano, and thyme.

At last, add the shredded chicken to it. Cook it for 3 minutes. Now mix the broth and cook for another 5 minutes or more. Remove the thyme sprigs from it. 

Place the tinga on the Tostada and serve. The excellent dish is ready. 

Shrimp-Avocado Tostadas

Shrimp-Avocado Tostadas

Ingredients 

  • Two dried ancho chile
  • 3 1/2 tablespoons fresh lime juice 
  • Three tablespoons vegetable oil
  • One large clove of garlic
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt 
  • 1 1/2 pounds medium shrimp
  • Corn tortillas 
  • Avocadoes 
  • Three scallions
  • Fresh cilantro 
  • Sour cream 
  • Diced tomatoes 

Directions to cook 

Start toasting the chilies in a skillet for about 1 minute. Transfer it to another bowl and add hot water to it. Let it sit for fifteen minutes. 

Put the chilies and three spoons of water in a blender. Then add three spoons of lime juice, one spoonful of vegetable oil, garlic, cumin, oregano, cayenne and salt. Make it into a smooth puree. Mix it with the shrimp and marinate in the refrigerator for fifteen to thirty minutes. 

Further, heat 1/4 inch vegetable oil in a skillet. Now fry the tortilla until it turns brown. Use paper towels to dry it out. 

Now take the avocadoes and mash them. Then mix scallion whites, lime juice, cayenne pepper, cilantro and a teaspoon salt. Next, take the shrimp and cook it in a pan. Season it with salt and drizzle the lime juice. Spread the avocadoes mash on the tortilla. Top it with shrimp, sour cream and diced tomato and scallion. 

Your shrimp-avocado Tostada is ready.
